In contrast to other ways in which we cook food, fermentative processes, languid, silent, and spanning days to years, are often perceived as passive and not very dynamic. With little in the way. of theatricality and drama, I think of fermentation as the culinary equivalent of mindfulness meditation. And as with meditation, at its core is power, decision and intention. "
